About our Founder
Growing up in her family’s NYC first Generation Greek Restaurant called Uncle Nick’s, paved the way of her dream to be a chef. Sophia Manatakis Graduated from the French Culinary Institute in 2012.Taking the opportunity to be a sous chef in the Mentor Young Chef competition ignited her self confidence to start cooking on her own. Sophia realized making short term career goals in the cooking world was the key to being happy. Along the way, she finally started her own cooking company which she cooks privately for people in there homes.
Sophia appeared on Food Networks chopped in 2017. Since being on chopped, doors have opened and Sophia is getting noticed in the culinary world. The Orthodox Christian Network recognized her with the 30 Under 30 entrepreneurship award for Culinary Arts at only 24 years old. Today, you can still find Sophia going after each and every dream. Cooking and traveling as a private Chef from NY NJ and FL. Creating all different kinds of events and unique custom culinary displays.

Since flavor and health benefits are the main reasons consumers buy extra virgin olive oil, we might wonder why many companies and most producers aren’t making healthy high phenolic olive oils. The reason: most producers have been trained to mass produce less healthy olive oil, focusing on quantity rather than quality, while many consumers are looking for a bargain.

Where PHIA comes from
PHIA oil is located in the southeastern most tip of the Peloponnese, Greece, in the region of Laconia. In ancient Greece, Laconia was the principal region of the Spartan state and today Laconia’s capital is Sparta.
The region of Laconia is enclosed between two great mountains, to the west, the famous mountain of Taygetos, of which in ancient times it was considered to lead to the gate of Hades and to the east the mountains of Parnonas which ends at the well-recognized town of Monemvasia.
Crossing through the middle of Laconia is the well recognized river Evrota, which was the place the ancient Spartans used to train. At the estuaries of Evrota is where our estates reside, less than 200 meters from the ocean in the sandy soils of Trinisa, Laconia, Greece.
